Salted muffins with cherry tomatoes, cheddar, fresh green onions and oregano, reminding us of the taste of pizza.

Description


1 In a large mixing bowl beat eggs, milk and melted butter.


2 Cut the green onion into rings and cherry tomatoes (each in half, or four). Grate the cheddar finely.


3 Add to the liquid ingredients tomatoes, onions, cheddar, tomato pesto, olives and oregano. Stir gently with a spatula or spoon.


4 Finally, add the flour with baking powder and the pinch of salt. Stir slowly and gently.


5 Preheat oven to 180 degrees. From the whole mixture I've got 13 muffins, so prepare at least as many paper cups. Fill the form to the top (you can see the photo below in the gallery). Bake between 25-30 minutes. It is good to check with a stick in the end if they are baked well. If the toothpick is dry, they're ready.
