It's spring! Once the dock has sprouted in the garden, I must make this recipe - baked rice with leeks, tomatoes and dock. You can replace the dock with spinach, you can also use a larger amount than indicated in the recipe according to your taste.

Description

It's spring! Once the dock has sprouted in the garden, I must make this recipe - baked rice with leeks, tomatoes and dock. You can replace the dock with spinach, you can also use a larger amount than indicated in the recipe according to your taste.


1 Cut the leeks into circles (I use the whole stalk of leek, not just the bottom). Put olive oil in a saucepan and simmer under a lid for about 10 minutes until melted.


2 Meanwhile, wash the rice well and cut the dock into thin strips.


3 Once the leek is ready, add the rice to it and stir for two minutes. Then add hot water (here it is good to follow the instructions of the rice producer, as in my case I add 3 cups of water to 1 cup of rice.) Add the chopped dock, tomato juice, salt, black pepper, dzhodzhen (mint) and red pepper. Mix well and while the oven heats up, leave everything on the stove to warm up as much as possible (so that it bakes faster later).


4 Pour into a baking pan or casserole and bake in a preheated 200-degree oven for about 40 minutes or until done.
