Chickpeas is a legume plant rich in valuable nutrients for the body. It’s rich in protein, Vitamin E, Vitamin B6, manganese, phosphorus. Chickpeas is a good source of folic acid, iron and magnesium, which are especially important for pregnant women. It has a high fiber content, making it suitable for those who want to lose weight.


Description

1 Finely chop the vegetables (carrot, onion, celery, garlic). Grate the ginger. In a saucepan put the olive oil and add the vegetables. Stew them on medium heat for about 7 minutes, putting the lid on the pot.


2 Add tomato juice, water and spices (paprika, turmeric, parsley, pepper). Allow to boil for 10 minutes on medium heat under cover.



3 Add the chickpeas and boil for another 10 minutes. I personally wait for it to cool slightly and then add the coconut milk. Enjoy!
