Dairy-free soda bread with einkorn flour and old fashioned rolled oats suitable for your table on Christmas Eve. Why with oats? They make the crust slightly crispy and enhance the aroma and taste that einkorn flour gives. It is important after you knead the dough and put it in the baking tray to press it until it is flat and let it stand for a while so that the oats does not stay dry.


1 In a blender grind the oats briefly, being careful not to grind them into flour. Set aside a teaspoon to sprinkle on the bread.


2 In a large bowl, mix the einkorn flour together with the ground oats, salt and baking soda. Stir. In another bowl, mix the water with the honey, olive oil and apple vinegar. Mix the liquids with the dry ingredients. Form a soft and sticky dough.


3 Line the baking tray with baking paper. Put the dough in the middle and press it with your hands to make it flat (about 2 cm thick). Carefully cut a cross with a sharp knife. Sprinkle with oats. Cover with a towel and leave warm place for about 30 minutes.


4 Bake on the lower level in a preheated 180 degree oven for about 35-40 minutes. Once the soda bread is ready, cover it with a towel for about 10 minutes .
