Description
1 Mix the dry ingredients in a bowl – flour, baking soda, baking powder, salt and black pepper.
2 In another bowl beat the eggs with the sugar. Then add vanilla, olive oil and butter (I recommend it to be softened at room temperature, not melted). Beat it again.
3 Gradually add the dry ingredients to the liquid ingredients . Stir briefly.
4 The mixture may seem slightly dense, but now it is time to add the wrinkled banana. Again stir briefly and add the chopped strawberries and carefully stir all ingredients.
5 Preheat oven to 190 degrees. From the whole mixture I've got 21 muffins, so prepare at least as many paper cups as possible. Fill the moulds almost to the top (you can see the photo below in the gallery). Bake for 19-20 minutes, while the muffins acquire a pleasant golden crust.
I recommend you to be careful by removing the muffins from the baking dish, because while they are hot they are very soft. I use a tablespoon, so as not to spoil their shape.
