Corn and yellow cheese muffins

Savory muffins prepared with sweet corn, green onions and yellow cheese. You can replace yellow cheese with cheddar or mozzarella. They are suitable for breakfast, as well as for lunch or dinner in a combination of hot soup.

Description


1 In a large bowl, beat the eggs. Add yogurt and olive oil and stir.


2 Add the dry ingredients to the liquid ingredients - flour, baking powder and salt. Mix well with a spoon or spatula. A thicker and stickier dough is obtained. Add the grated yellow cheese, well-drained sweet corn, finely chopped green onions and mix well.


3 From the whole mixture, I get about 20 muffins. You can use a silicone mold or paper cups. Fill them almost to the top.


4 Bake in a preheated 190 degree oven for about 20-25 minutes or until the corn and yellow cheese muffins acquire a nice golden crust. Allow the muffins to cool completely before eating so that you can easily peel the paper cups from them.
