Description
Favourite recipe for pancakes made with cottage cheese and eggs. We are fans of pancakes at home and this recipe has become a favourite of those we often prepare.
If you like sweeter pancakes, you can add another 1-2 tablespoons of sugar. You can garnish them with maple syrup and fresh fruit (my favourite!), honey, jam or cream cheese, yellow cheese, cheddar, or why not pesto.
1 Beat the eggs with the sugar. Add the vanilla extract and cottage cheese. Beat well.
2 Add the flour, baking powder and salt. Beat until smooth and homogeneous.
3 Heat a non-stick pan over medium heat (at 9 levels on the electric hob I use, I bake them at level 6.) Grease it well (2-3 tablespoons of oil (I recommend not using butter because it burns quickly). Pour about 1/4 cup of the pancake mixture. Bake 2 or 3 pancakes in the pan at the same time, I prefer to make them smaller. Bake on both sides until golden brown.
