Salad with einkorn, spinach, cranberries and walnuts, flavoured with lemon juice, extra virgin olive oil, honey (or maple syrup), a little mustard and grated feta cheese. If you want the salad to be vegan, you can skip the cheese.

Description

1 Soak the einkorn in warm water for 8 to 24 hours. You can also add some apple cider vinegar. If you do not have the necessary time, you can go directly to the boil. Wash it well and cook on medium heat in a ratio of 1:3 (1 cup einkorn with 3 cups of water). Usually it takes about 20 minutes to boil. After the einkorn is boiled, wash it, drain well and set aside.


2 Peel and chop the baby spinach and the walnuts.


3 In a large salad bowl, add the einkorn, spinach and cranberries. Season with extra virgin olive oil, freshly squeezed lemon juice, honey and, if desired, a little mustard. Grate the cheese on top. If you want the salad to be vegan, you can skip the cheese.
