Delicious einkorn muffins with cottage cheese, yellow cheese, white cheese and olives.

Description


1 Grate the yellow cheese and chop the olives.


2 In a large bowl, beat the eggs with the olive oil. Add the cottage cheese, yellow cheese, olives and shredded white cheese (or finely chopped ham). Mix well with a spoon or spatula.


3 Add the einkorn flour with the baking powder and salt. Stir.


4 Preheat oven to 200 degrees. From the whole mixture, I've got 12 muffins. It is best to use a silicone molds for baking, because paper cups may be harder to peel off from the muffin (this depends on the types of cheese you use and the paper cups itself). I usually forget that and bake the muffins in paper cups. This, of course, does not change their taste in any way and they disappear very quickly after baking. But let's go back to their preparation. Fill the silicone molds for baking almost to the top (you can see in the photo below).


5 Bake for 25 minutes or until the muffins acquire a pleasant golden crust. If you use paper cups, wait for the muffins to cool well before eating.
