Stuffed zucchini (or boats) with feta cheese and tomatoes, baked in the oven or in short - one of my favourite summer dishes. I love that this recipe also uses the insides of the zucchini, resulting in a very tasty and light dish.

Description

Stuffed zucchini (or boats) with feta cheese and tomatoes, baked in the oven or in short - one of my favourite summer dishes. I love that this recipe also uses the insides of the zucchini, resulting in a very tasty and light dish.


1 Wash the zucchini well and cut them in half lengthwise. Using a spoon, hollow out the inside of them so that you get boats.


2 You will need the inside of the zucchini. Cut them into small cubes and put them in a bowl. Peel the tomato and cut it into small cubes, and finely chop the onion. Press the garlic cloves. Add the olive oil and salt and stir well.


3 Pour the mixture into a baking tray and level with a spoon. Arrange the zucchini on it and bake in a preheated oven at 230 degrees for 20 minutes.


4 Meanwhile, prepare the filling. In a bowl, beat the egg. Add the crumbled cheese, parmesan, tomatoes (again peeled and diced), olive oil and basil. Stir well.


5 After the zucchini has been baked for 20 minutes, take them out of the oven and fill them with the filling. Bake for another 20-25 minutes, until they acquire an appetizing crust.

  • Dear Maxine, the quantity of the ingredients are calculated for 3 zucchini (6 halves). The photos are chosen to illustrate the structure of the meal and how the ingredients are placed. Of course, all quantities are approximate and you can change them according to your own taste - don't hesitate to experiment 🙂.

  • I am a little confused. Do you mean 3 zucchini or 1 1/2 which would be 3 pieces. In one photo you show 1 1/2 and in another you show 5 halves.
