Description

Delicious meatballs made of zucchini, which even capricious children could not resist! My two kids refuse to eat zucchini, but I stubbornly try new things and offer them. One day I made these meatballs for them and for my surprise they disappeared very quickly, they even asked me to make them again the next day. So I want to share a delicious recipe for zucchini and yellow cheese meatballs that you should try!


1 Grate the zucchini. Put them in a strainer and salt them. Stir and set aside for about 10 minutes to drain excess liquid.


2 Meanwhile, prepare the remaining products. Grate the yellow cheese, chop the onion finely. Put them in a deep bowl. Add to them the pressed garlic cloves, parmesan, eggs and black pepper to taste.


3 Squeeze the excess liquid from the zucchini with your hands. Add them to the other ingredients. Add the breadcrumbs. Mix everything well.


4 Using a spoon, form balls by making them slightly flat and place them on a tray lined with baking paper.


5 Bake in a preheated 200 degree oven and turn them over at the 15th minute. Bake for another 10 minutes or until the zucchini meatballs with yellow cheese acquire a nice golden crust.
