Lemon cake with zucchini and lemon glaze. Why not!? Try it! The combination may sound strange, but the truth is that you get the perfect, fragrant, fresh and delicious lemon cake, and the glaze gives it a fine finish.

Description

Lemon cake with zucchini and lemon glaze. Why not!? Try it! The combination may sound strange, but the truth is that you get the perfect, fragrant, fresh and delicious lemon cake, and the glaze gives it a fine finish.


1 In a large bowl, beat the egg with the sugar. Add the finely grated zucchini (without squeezing the juice out of it), lemon peel, lemon juice and olive oil. Stir.


2 In a bowl, mix the flour with the baking powder, baking soda and salt. Add to the liquid ingredients and stir.


3 Pour the mixture into a greased cake pan and bake in a preheated 180 degree oven for about 30-35 minutes. Check with a stick. When the stick comes out dry, the cake is ready.


4 To prepare the glaze - in a small bowl pour powdered sugar and beat with lemon juice. Pour over the cake after it has cooled.
