Description
1 In a bowl, beat the egg with the sugar, then add the water and olive oil.
2 In another bowl, mix the flour with salt and baking powder.
3 Add the liquid ingredients to the dry ones and quickly stir with a wire stirrer until a homogeneous mixture. Do not over mix to make the pancakes fluffy.
4 Heat a pan over medium heat, dripping 2-3 drops of oil or butter in the center. Pour half a ladle (about 1/4 cup) of the mixture into the center of the fat. Bake on both sides until golden brown.
From the indicated quantity I get 13 pieces of pancakes. You can reduce sugar if you don't want the pancakes to be so sweet. They're great in combination with maple syrup, honey or jam.
