There are many different recipes for banitsa (Bulgarian cheese pie) on the Internet, and each household in Bulgaria prepares it in its own unique way. I offer you my version of a crispy banitsa with feta cheese and sparkling water, which I regularly prepare at home.

Description

There are many different recipes for banitsa (Bulgarian cheese pie) on the Internet, and each household in Bulgaria prepares it in its own unique way. I offer you my version of a crispy banitsa with feta cheese and sparkling water, which I regularly prepare at home. You can see the short video.


1 Grease the baking tray with a tablespoon of olive oil. I use a tray measuring 37x44 cm.


2 Prepare the phyllo, crush the cheese. At the bottom I put 3 phyllo sheets, then I start sprinkling about 2 tablespoons of feta cheese, again a row of phyllo sheets and feta cheese again. I finish with three phyllo sheets.


3 Use a sharp knife to cut the banitsa into squares. Heat the butter until it boils and pour it over each incision. Beat the eggs, add the sparkling water and pour over the banitsa. I let it sit like this for about 5 minutes until my oven heats up.


4 Bake in a preheated 180-degree oven for about 40 minutes or until golden brown.
