Kale, bulgur and halloumi salad

Nutritious salad prepared with kale, cherry tomatoes, red onions, bulgur and roasted halloumi.

Description


1 Wash bulgur before use. Soak it in 2 cups of hot water for about 20 minutes. Try it to see if it is ready to eat. If not - leave it soaked a little more and if necessary add a little water. You can also boil it until ready according to the packaging. Once the bulgur is ready, drain it well.


2 Cut the kale into thin strips, onion into small pieces, cherry tomatoes in half or in four. Put everything in a large salad bowl, season with olive oil, vinegar and salt. Add the bulgur and mix well.


3 Cut the cheese into slices. Heat a grill or ribbed pan over medium heat (or non-stick frying pan). Bake the halloumi (without moving the pieces) on each side for about 2-3 minutes. Add to the salad.
