Skyr is rich in many nutrients that could benefit your health. It is also good for bone and heart health, can help weight loss and regulate blood sugar by providing a good amount of protein with minimal amounts of carbohydrates and fats. Overall, skyr can be a healthy addition to most diets.

The recipe for these pancakes is my favorite because you get delicious, nutritious and healthy pancakes that you can combine with whatever you like. Here's how I prepare them:

1 Put the oatmeal in a food processor or blender and grind them into flour for about 30 seconds to 1 minute.

2 In a large bowl, beat the two eggs. Add to them skyr, honey and coconut oil. Stir well.

3 Finally, add the dry ingredients - ground oatmeal, baking powder, baking soda and salt. Mix well until a homogeneous mixture (the resulting mixture is thick).

4 Preheat pan with non-stick coating on medium heat (at 9 levels on the electric hob I use, I bake them at level 5). Put two tablespoons of the mixture in the middle of the heated pan. Carefully with the spoon make circular movements on the mixture without peeling the spoon from it while forming a round pancake. Bake until golden on both sides.
