Bulgur with tomatoes and onions - a favorite dish that I often prepare in the summer with fresh tomatoes from the garden.

Description

A favorite dish that I often prepare in the summer days with fresh tomatoes from the garden. You can add red or green peppers, as well as olives.


1 Wash bulgur before use. Soak it in hot water for about 20 minutes. Try it to see if it is ready to eat. If not - leave it soaked a little more, and if necessary, add a little more water.


2 Meanwhile, chop the onion finely, the tomatoes into small cubes.


3 On medium heat, sauté the onion in olive oil until translucent. Add the tomatoes. Stir often. Once the juice evaporates and thickens, add the drained bulgur. Stir and cook for a few more minutes so that the bulgur absorbs the aromas of onions and tomatoes. Add salt and pepper to taste. You can serve with finely chopped parsley or grated parmesan, cheddar, yellow cheese or feta cheese.
