Description
1 In a bowl, mix the dry ingredients – the flour, baking powder, soda, salt and cinnamon. Stir.
2 In another bowl or food processor, mix the egg and sugar. Beat them well. Add the cooking oil, yogurt, vanilla and water. Mix. Add the dry ingredients to the liquid ones.
3 Finally add the crushed bananas to the mixture and stir briefly.
4 For the preparation of the topping – mix the ground walnuts with the sugar.
5 From the whole mixture I received 24 muffins, so prepare at least as many paper cups. Fill the 1/2 from the cup. Sprinkle every muffin with the topping. Put the muffins to bake in the preheated oven at 220°C/428°F for 12 minutes.
Tip: Do not overfill paper cups with the mixture before baking. Fill them up to half. This way they will bake well for the intended time.
