The Einkorn is one of the most ancient cultures known since the time of the ancient Thracians. It has existed for at least 18 000 years. The grains are rich in vitamins (A, B and E) and minerals (magnesium, manganese, phosphorus, zinc). Recommended for consumption by people who are intolerant to gluten. Separate consumption of einkorn controls diabetes, stimulates the immune system, helps blood circulation, lowers cholesterol, regulates hormones, supports bone health. Another curious thing worth mentioning is that this culture is not treated with any chemical substances, since it does not ill. Even if it is planted in contaminated soil, it does not absorb the unnecessary substances from it. This makes the einkorn a preferred food for many nowadays.


Description

1 Soak the einkorn in warm water for 8 to 24 hours. You can also add some apple cider vinegar. If you do not have the necessary time, you can go directly to the boil. Wash it well and cook on medium heat in a ratio of 1:3 (1 cup einkorn with 3 cups of water). Usually it takes about 20 minutes to boil. After the einkorn is boiled, wash it, drain well and put aside in a large bowl.


2 Boil the quail eggs for 3 minutes. Peel and set aside.


3 Cut the onion and celery finely, the tomatoes and the avocado into cubes. Add to the einkorn.


4 Flavour with extra virgin olive oil, half lemon juice and salt to taste. Stir well and finish with cut into two quail eggs.
