Tabbouleh is a fresh salad of lots of parsley and bulgur with diced cucumbers, tomatoes and onions, flavored with olive oil, lemon juice and salt. I decided to replace bulgur with einkorn, which resulted in a delicious and nutritious salad.

Description

Tabbouleh is a fresh salad of lots of parsley and bulgur with diced cucumbers, tomatoes and onions, flavored with olive oil, lemon juice and salt.


1 Soak the einkorn in warm water for 8 to 24 hours. You can also add some apple cider vinegar. If you do not have the necessary time, you can go directly to the boil. Wash it well and cook on medium heat in a ratio of 1:3 (1 cup einkorn with 3 cups of water). Usually it takes about 20 minutes to boil. After the einkorn is boiled, wash it, drain well and put aside in a large bowl.


2 Finely chop the tomatoes and cucumbers, onion and parsley. Add to the cooked einkorn and season with lemon juice, salt and olive oil.
