For leek lovers - twisted pie (banitsa) with whole wheat phyllo (fillo) dough and leeks! Suitable for people who fast or you can serve it on the table on Christmas Eve!


1 Finely chop the onion and leeks into circles using both the white and green parts.


2 In a large pot, pour the olive oil and add the onion. Stew it over medium heat for about 2-3 minutes, then add the chopped leeks. Mix well and cover the pot with a lid. Stir occasionally until the leeks are soft (about 20 minutes). I use a pot with a non-stick coating. If you use another type of pot, you can add 1/3 cup water so that leeks do not stick. Once the stuffing is ready, while it is still hot, add the spices and leave to cool.


3 Prepare the baking tray in which you will arrange the banitsa (I use a tray with a diameter of 26 cm). Grease it well.


4 Put about 4 full tablespoons of stuffing on two of phyllo sheets, spread it everywhere and roll it up on the long side of the sheets. Arrange in the shape of a snail, starting from the center of the tray. Repeat with the remaining phyllo sheets until the stuffing is finished.


5 After arranging the banitsa in the baking tray, grease it with olive oil for cooking (or sunflower oil) on top.


6 Bake in a preheated 200 degree oven until the pie (banitsa) acquires an appetizing golden brown.
