Rhodope colatsi

A close friend of mine from a pretty rhodopean village in Bulgaria recently shared with me the recipe for rhodope colatsi, taken from old notebooks. The recipe is extremely easy and with few ingredients - eggs, kefir, soda, butter and white flour. You can also add white cheese.

Description

A close friend of mine from a pretty rhodopean village in Bulgaria recently shared with me the recipe for Rhodope colatsi, taken from old notebooks. They are similar to pancakes. The recipe is extremely easy and with few ingredients. According to the original recipe, no cheese is added, but oil is used instead of butter. I leave you the choice of products, and this is how I prepare them.


1 In a large bowl, beat the eggs. Add the kefir and baking soda. Stir. Add the flour and beat until smooth.


2 Preheat pan with non-stick coating on medium heat. Put a lump of butter and after it melts, pour in the center of the fat a ladle of the mixture for the rhodope colatsi. Do not spread, as is done with pancakes, but only lightly flatten the top. Bake well on both sides. Then add butter again and repeat with the remaining mixture. After I have used half of the mixture, I crumble the cheese into the rest and bake again.
