Description
Delicious, healthy muffins made with whole wheat einkorn flour, honey and bananas, without sugar. I make them with chocolate drops or chocolate, but if you want to avoid chocolate, you can just skip it. They turn out great and without it.
1 In a bowl, mix the dry ingredients - einkorn flour, baking powder, baking soda and salt. Stir.
2 In another bowl beat the egg with the honey, vanilla and coconut oil. Add the yogurt and mashed bananas and stir.
3 Add the dry ingredients to the liquid ones. Stir. Then add the chocolate drops and stir again briefly.
4 Preheat oven to 180 degrees. From the whole mixture I got 12 muffins. I use silicone molds for baking. Fill 3/4 of the mixture in each mold. Bake for 20-25 minutes or until the einkorn banana honey muffins acquire a pleasant golden crust. I leave them in the silicone mold to cool, then carefully remove them from the molds.
