Traditional Irish soda bread is made from four ingredients - soft wheat flour (low in gluten), baking soda, salt and buttermilk (or kefir). 1 In a large bowl, pour the flour along with the baking soda and salt. Stir. Make a well and add the kefir (if your kefir is not ready, mix the yogurt with the water and beat well). Knead a smooth dough by kneading it for at least 2-3 minutes.

2 Put baking paper in a baking tray. Put the kneaded dough in the middle and press it with your hands to make it flat (about 3-4 cm thick). Carefully cut a cross with a sharp knife.

3 Bake on the lower level in a preheated 210 degree oven for about 35-40 minutes, until the irish soda bread acquires an appetizing golden crust. After removing it from the oven, cover it in a towel for about 5-10 minutes.
