Bean stew is probably one of the most popular dishes in Bulgaria and is prepared weekly at our table. This is our favourite recipe for vegan bean stew in a clay pot, which I hope you like.

Bean stew is probably one of the most popular dishes in Bulgaria and is prepared weekly at our table. This is our favourite recipe for vegan bean stew in a clay pot, which I hope you like.

1 Wash the beans and bring to a boil in a saucepan of hot water, adding the soda. Thanks to soda, beans cook much faster. Do not move too far from the hob, because it boils quickly and a lot of foam is released. Boil it for about 5 minutes. The water turns very yellow, so don't be surprised. Then wash it and change the water (for faster you can put hot water again). After boiling, change it once more, then drain.

2 While the beans are boiling, prepare the remaining products. Cut the onion into small pieces, the pepper into large pieces, and peel the garlic cloves (I put them whole). Put everything in the clay pot. Add the tomato juice, red pepper and olive oil. Mix the flour with a little water to make a paste and no lumps, then add again to the other products in the clay pot. Add the beans and top up with water (about 2 fingers above the beans). Stir and cover with a lid. Put the casserole in a cold oven and set it to 200 degrees. Bake for about 2 and a half hours and you can stir from time to time. Finally, add the salt and stir.

  • Зрелият боб има достатъчно скорбяла. Добре сварен сам се сгъстява. С добавено брашно много ми е интересно как го вадите от тенджерата(гювеча) след като изстине?.......с чук и длето? Иначе в гювеч наистина става пръстите си да оближеш. Слагам по-малко домати от вас, добавям девисил и юзъм като подправки, без чесън......вече е въпрос на вкус.
