Tarator is a traditional Bulgarian cold cucumber soup made with yogurt and cucumbers. It may sound strange, but there is an easy and tasty way to prepare it in a vegan version. Instead of yogurt, you need raw sunflower seeds and water, the rest is well known.

Tarator is a traditional Bulgarian cold cucumber soup made with yogurt and cucumbers. It may sound strange, but there is an easy and tasty way to prepare it in a vegan version. Instead of yogurt, you need raw sunflower seeds and water, the rest is well known. Here's how I make it.

1 Put in blender sunflower seeds, garlic, salt and about 200-250 ml of water (which is 1 cup). Blend for about a minute or two until smooth. Add as much water as the blender can hold and blend again briefly. Pour into a large bowl and add the remaining water (if any is left).

2 Peel and cut the cucumber into small cubes (or grate it). Add it to the almost finished tarator. Season with olive oil and lemon juice. Stir well. Cover the bowl and refrigerate for about an hour to cool. I advise you not to miss this last step.

3 Since not all of us are lovers of dill - in a small bowl, finely chop about half a bunch of dill, crush about 1 small head of garlic, add 1-2 tablespoons of olive oil to them and sprinkle. To this mixture, you can add raw walnuts or additionally cut them into small pieces and anyone who wants to add them.
