Vegan suggestion for chia pudding made with coconut milk. I prefer to prepare it with coconut milk, but you can replace it with almond, oat or cashew milk, according to your taste and choice. Chia pudding is suitable for breakfast or dessert. With the topping, you can completely improvise - all kinds of fruits, nuts, cinnamon, cocoa, maple syrup, honey or chocolate.

1 Put the coconut milk in a glass or a suitable jar. Add the grated lemon zest, vanilla, maple syrup and chia seeds. Stir and set aside for about 20 minutes, stirring once or twice so that no lumps remain. Leave in the refrigerator for about 2 hours. Serve with topping to your taste.
