Quick and easy - garlic mushrooms with quinoa. You can prepare the dish with quinoa according to your taste and choice. I personally like tricolour quinoa. I prefer to use green onions for more flavour, but it's also delicious with yellow onion.

Description

Quick and easy - garlic mushrooms with quinoa. You can prepare the dish with quinoa according to your taste and choice. I personally like tricolour quinoa. I prefer to use green onions for more flavour, but it's also delicious with yellow onion. Garlic may seem like a lot to you, but once it's cooked, it's not that much. I would add even more.


1 If possible, wash the quinoa. Boil it according to package directions in lightly salted water.


2 Finely chop the onion and press the garlic (or also finely chop it). Cut the mushrooms into slices.


3 In a saucepan with a lid, add the olive oil, onion, garlic and mushrooms. Add salt and black pepper. Simmer them under a lid for 5 minutes, then remove the lid and cook them for about 15 minutes, until the water has evaporated and they are lightly browned.


4 Once everything is ready and the heat is off, add the quinoa to the vegetables, mix well and put the lid on the pot for about 5 minutes. This way the quinoa will absorb the flavours of the vegetables and not become dry.
