Spring dock and potato soup

In the dock season, there is nothing tastier than a warm spring dock soup with potatoes and noodles. This is one of our favourite soups at home, and to enjoy it all year round, now is the time when you can freeze and have a dock during the winter months.

Description

In the dock season, there is nothing tastier than a warm spring dock soup with potatoes and noodles. This is one of our favourite soups at home, and to enjoy it all year round, now is the time when you can freeze and have a dock during the winter months. I prepare it as follows - I collect the dock, and wash it well. I remove the handles and cut the dock into thin strips. (I remove the handles because they release bitterness into the dish during cooking.) Put the dock in envelopes and freeze it. I do not scald it, because it is unnecessary and there is no need. And so you will have a washed and sliced dock for cooking with it. And here's how I make our favourite soup:


1 Finely chop the yellow onion, fresh onion and fresh garlic. Stew them in olive oil for about 3-4 minutes. Grate the potatoes. Add them to the onion and stir constantly for one minute. Add water, salt and black pepper. Cook for 20 minutes.


2 During this time, you can wash and clean the dock from the handles (as the handles release bitterness). Cut it into thin strips. After the soup has boiled for 20 minutes, add the chopped dock and noodles. Cook for another 6-7 minutes.


3 In a bowl, beat the yolk with the yogurt. Add 3-4 scoops of the soup, stirring constantly, then return to the rest of the soup in the pot and mix well.
