Coconut flour honey raisins muffins that you can make easily and quickly. You need coconut flour, honey (preferably liquid, but if it's not - you can melt it in a water bath), non-dairy milk (I use rice, but it will work well with almond or coconut milk), raisins (you can replace them with cranberries, dates or prunes finely chopped, and why not chocolate). And if you are on a gluten-free diet, you can use gluten-free baking powder.

Description

Coconut flour honey raisins muffins that you can make easily and quickly. Тo prepare them you need:

  • coconut flour;
  • honey - preferably liquid, but if it's not - you can melt it in a water bath;
  • non dairy milk - I use rice, but it will work well with almond or coconut milk;
  • baking powder - if you are on a gluten-free diet you can use gluten-free baking powder ;
  • raisins - you can replace them with cranberries, dates or prunes finely chopped, and why not chocolate. Usually when I make cakes or muffins, I always soak them in hot water and a little alcohol like rum or whiskey to make them juicy and fragrant.


1 Soak the raisins with enough hot water to cover them (I add to them a tablespoon of alcohol - rum or whiskey). In this way they become juicy and fragrant. It is enough to sit soaked while preparing the mixture for the muffins, then drain them well.


2 To prepare the mixture for the muffins - in a bowl beat the eggs with honey. Add the coconut oil, vanilla essence and non dairy milk. Stir.


3 In another bowl, mix the dry ingredients - coconut flour, baking powder and salt.


4 Add the dry ingredients to the liquid ones. Beat well so that no lumps remain. At first, the mixture may seem thin, but in less than a minute it will thicken. Once the mixture is well beaten, add the raisins.


5 From the whole mixture I got 6muffins. I use silicone molds for baking. Fill 3/4 of the mixture in each mold. Bake in a preheated 180 degree oven for about 25-30 minutes or until they acquire a nice golden crust. Allow them to cool, then carefully remove them from the molds.
