Prepare delicious banana muffins with oatmeal and crunchy topping briefly without any special effort.

10 min. preparation

25 min. baking

190°C

12 muffins

Description

1 Mix the dry ingredients in a bowl – old fashioned rolled oats, flours, baking soda, salt, cinnamon, nutmeg and vanilla. Stir them.

2 In another bowl or food processor, mix the egg and sugar. Beat them. Add the olive oil and mashed bananas. Stir briefly. Gradually add the dry ingredients.

3 To prepare the crispy topping, melt the butter in a water bath. Add the sugar, cinnamon, old fashioned rolled oats and stir well.

4 Turn the oven to 190 degrees. Prepare 12 muffin cups as in each one put baking paper cup. Fill the 3/4 from the paper cup. If you use silicone mold, you will not need the paper, but grease with a little butter each nest. Sprinkle every muffin with the topping. I personally feel the most comfortable doing it with my fingers. Put the muffins to bake in the preheated oven at 190 degrees for 25 minutes.

Coconut flour honey raisins muffins that you can make easily and quickly. You need coconut flour, honey (preferably liquid, but if it's not - you can melt it in a water bath), non-dairy milk (I use rice, but it will work well with almond or coconut milk), raisins (you can replace them with cranberries, dates or prunes finely chopped, and why not chocolate). And if you are on a gluten-free diet, you can use gluten-free baking powder.
