Description

1 Soak the mung bean for a few hours so it will cook faster. Then wash it, place in a saucepan and cover with water. Cook over medium heat until the grains soften (be careful not to overcook it). It took me about 15-20 minutes.


2 After the mung bean is cooked, wash it with cold water and set aside to drain and cool.


3 During this time, prepare the vegetables. Cut the tomato into cubes, onion and pepper into thin slices. Squeeze out the juice of half a lemon.


4 Mix mung beans with sliced vegetables and seasoning with lemon juice, extra virgin olive oil, salt and a teaspoon of mustard with honey. You can also add chopped parsley, if you like. Stir well.
