Some would call it Gazpacho, but there is bread in his original recipe, and here I use only vegetables, which I beat until smooth in a blender to make a quick and healthy tomato soup without heat treatment.

Some would call it Gazpacho, but there is bread in his original recipe, and here I use only vegetables, which I beat until smooth in a blender to make a quick and healthy tomato soup without heat treatment. If you want you can add a little turmeric and black pepper for an even richer taste.

1 Peel a tomato and a cucumber (if your cucumber is organic, you may not peel it, but you must remove the tomato peel). Cut all the vegetables into small cubes. Add the garlic cloves, lemon juice, olive oil and salt.


2 Put everything in a blender and beat until smooth, homogeneous mixture for about 2 minutes. You can serve it in a glass or in a bowl. If served in a bowl, you can grate feta cheese or yellow cheese and add fresh basil or parsley leaves.


From the indicated quantity you can prepare about 500 ml of cold tomato soup.
