Delicious baked vegetables with potatoes, mushrooms, red pepper and beans. I used canned black beans to prepare the recipe, but you can use any to your taste or pre-cook. I add a little chili, which makes the dish slightly spicy and more appetizing. If you are fasting and want the dish to be vegan, you can skip the yellow cheese or replace it with vegan mozzarella.

Description

Delicious baked vegetables with potatoes, mushrooms, red pepper and beans. I used canned black beans to prepare the recipe, but you can use any to your taste or pre-cook. I add a little chili, which makes the dish slightly spicy and more appetizing. If you are fasting and want the dish to be vegan, you can skip the yellow cheese or replace it with vegan mozzarella.


1 Peel the potatoes and cut them into cubes. Boil them for about 10 minutes in salted water. Once they are ready, drain them.


2 Wash and cut the mushrooms in four, the red pepper into pieces. Drain the beans.


3 In a large bowl, mix all ingredients - potatoes, beans, red pepper, mushrooms, beans and tomato juice. Add olive oil, salt, black pepper, paprika and chili. Mix well.


4 Pour into a casserole and bake in a preheated 200 degree oven for about 50 minutes, stirring the vegetables 2-3 times during baking. Sprinkle with grated yellow cheese (cheddar or mozzarella) and bake for about 7-8 minutes.
