Roasted avocado with egg is an easy and healthy idea for lunch or dinner, and why not for breakfast. The preparation of the recipe is very easy, and in the combination of fresh side dish you get a finished and delicious course.

Roasted avocado with egg is an easy and healthy idea for lunch or dinner, and why not for breakfast. The preparation of the recipe is very easy, and in the combination of fresh side dish you get a finished and delicious course.


1 Wash and cut the avocado in half. Carve a small part of it so that it can fit the egg. Save the inside, you will need it for the side dish. Mix olive oil and lemon juice. Brush the avocado with them. Season with salt and black pepper.


2 Separate the yolks from the whites. Put the yolk in each piece of avocado and fill with the egg whites. If desired, you can sprinkle again with a little salt and pepper. Bake the avocado egg boats in a preheated 200 degree oven for about 20 minutes.


3 For the side dish - mash the avocado you carved, cut the tomatoes into small cubes, onion into small pieces and parsley. Season with salt, olive oil, lemon juice and mix well.
