Fresh salad prepared with orzo (also called kritharaki , arpa fide or risoni), cucumbers, spinach, parsley and walnuts, seasoned with crushed garlic, freshly squeezed lemon juice and extra virgin olive oil.

Description

1 Prepare the orzo according to the instructions on the package and wash it with cold water after that. Add a few drops of olive oil, stir and set aside.


2 Peel and chop the baby spinach, cucumber, parsley and walnuts.


3 In a large salad bowl, add the orzo and chopped vegetables. Season with olive oil, lemon juice, crushed garlic cloves and salt. Stir well.
