Description

For the preparation of these appetizing and delicious sour cream pancakes I have used different types of flour - white, wholemeal or einkorn. They turn out excellent with each of them. You can skip the vanilla extract and replace the honey with brown sugar.

1 Beat the eggs with the honey. Add sour cream, baking soda and vanilla extract. Beat well.

2 Add the flour and mix until homogeneous.

3 Preheat pan with non-stick coating on medium heat (at 9 levels on the electric hob I use, I bake them at level 5.). For a pancake I use 1/4 cup of the mixture. Spread it quickly in the shape of a circle, but not too thin. When bubbles begin to form on the pancake, turn it over. Repeat with the remaining mixture. After I pull out every pancake while it's still warm, I put some butter on it. From the indicated dose I get 11 pancakes.

A close friend of mine from a pretty rhodopean village in Bulgaria recently shared with me the recipe for rhodope colatsi, taken from old notebooks. The recipe is extremely easy and with few ingredients - eggs, kefir, soda, butter and white flour. You can also add white cheese.
