Description

Skyr is an Icelandic dairy product, fat-free, but with much more protein than other dairy products. It looks like strained yogurt, but is less sour. It is classified as a type of cheese, similar to cottage cheese. I offer you an easy and delicious recipe for potato salad with skyr.

1 Peel and wash the potatoes. Cut them into cubes. Put them to boil for about 20 minutes (I use a steaming cooker). Once cooked, drain and allow to cool. While they are still hot, I lightly salt them.

2 Meanwhile, in a large bowl, cut the onion into strips and squeeze the garlic cloves. Add the skyr, mustard and lemon juice to them. Season with salt to taste. Stir. I offer you an easy and delicious recipe for potato salad with skyr.

3 Add the cooled potatoes and mix well. With this the recipe is fulfilled. Consume with pleasure!
