Zucchini, broccoli, peppers, carrots, yellow onion, cherry tomatoes for more juiciness and garlic for more flavour - I love roasted vegetables prepared in this way. They are extremely easy to prepare. You can serve them with a sauce of your choice, or crumble cheese on them. They can also be served as a side dish or a warm salad.

Description

Zucchini, broccoli, peppers, carrots, cherry tomatoes for more juiciness and garlic for more flavour - I love roasted vegetables prepared in this way. They are extremely easy to prepare. You can serve them with a sauce of your choice, or crumble cheese on them. They can also be served as a side dish or a warm salad.


1 Clean and cut the vegetables into more or less equal pieces. In one large bowl, I cut the peppers, onions, carrots and tomatoes, and in another (or the same) I cut the zucchini and broccoli.


2 In a small bowl, add olive oil and pressed garlic cloves. Stir well. Pour half of the mixture over one bowl of vegetables and the rest over the other. Season with salt and pepper. Stir well. You don't need to add more olive oil.


3 In a large baking tray lined with baking paper, pour the vegetables and spread them evenly so that they roast well. Bake in a preheated oven at 220 degrees for about 20 to 30 minutes, depending on how well you want the vegetables baked.
