Feta cheese sticks with spelt flour, for which you will need more yogurt, butter and eggs. You can sprinkle them with spices or seeds according to your taste - sesame, poppy seeds, flaxseed, paprika, savory. I personally like them with paprika and sesame. They become quite a lot, so you can try different flavors. White spelt flour can be successfully replaced with white flour.

In a bowl, beat the eggs with the sugar, then add the yogurt. Grate the cheese.

In another large bowl pour the flour. Cut the butter into cubes and add it to the flour (I recommend the butter has just been removed from the fridge). Knead the flour with the butter between your fingers so that you get crumbs.

Add the cheese and eggs to the flour with the yogurt. Knead the dough. Put it in a bowl, cover with cling film and refrigerate for about an hour.

Meanwhile, beat the yolk with olive oil and prepare your chosen spices or seeds for sprinkling.

When the dough is ready, cut it into two equal parts. Roll out each of the parts on a floured surface in the form of a rectangle about 3-4 mm thick. Using a kitchen knife or pizza knife, cut the dough into thin strips as shown in the photos below. Brush them with egg yolk, then sprinkle with the desired spices or seeds. Transfer the feta cheese sticks to a large baking tray lined with baking paper with distance between them.

Bake in a preheated 180 degree oven for 15-20 minutes, the baking time depending on the thickness of the feta cheese sticks and your oven.
