My favourite spinach salad with quinoa.

Description


1 Boil the quinoa according to the instructions and wash it afterwards. Add a few drops of olive oil, a pinch of salt and set aside.


2 Wash the spinach and cut it into thin strips. Tomatoes peel and cut into cubes. Clear the onion and cut it finely.


3 In a large bowl combine the vegetables with the quinoa. Add the juice of half a lemon, olive oil and salt to taste. The cheese can grate, crumbed (I prefer this option) or cut into cubes in a salad. Stir well.
