Description

This fragrant vegetable soup with orzo is a tasty and easy proposal to diversify your standard menu. It is prepared with orzo, onions, carrots, celery, garlic and tomatoes. And here's how I prepare it:


1 Finely chop the onion, carrots and celery into small cubes.


2 In a saucepan add olive oil, chopped vegetables and garlic cloves and stew for 6-7 minutes.


3 Add 2 liters of water, tomato juice, salt, oregano and black pepper. Cook for about 10 minutes, then add the orzo (the orzo I use takes 13 to 15 minutes to cook). Cook the orzo soup for at least another 15 minutes. If desired, sprinkle the already prepared vegetable soup with finely chopped leaves of celery or parsley.
