Description
The recipe is suitable for everyone who does not have time and opportunity to prepare the traditional Easter cake. It collects all the specific ingredients and aromas, as a result of which you will get quick small Easter cake in the form of muffins.
1 In a bowl beat the eggs with the sugar. Add the olive oil, yogurt, vanilla extract and lemon juice. Stir.
2 In another bowl combine the dry ingredients-flour, baking powder, salt and baking soda. Add to the liquid ingredients and stir briefly.
3 Finally, add the raisins and the grated zest of lemon. Stir again briefly.
4 Preheat oven to 190 degrees. From the whole mixture I received 24 muffins, so prepare at least as many paper cups. Fill them a little more than half. You can sprinkle them with sugar or vanilla sugar. Bake for 20 minutes or until the muffins acquire a pleasant golden crust.
Raisins can be soaked in rum or whiskey. Another option is to add a few drops of rum essence and top up with warm water. Drain well before adding to the muffin mixture. This will give them more flavor and juiciness.
