Baked polenta with tomatoes and cheese

To diversify the menu with delicious baked polenta with tomatoes, feta cheese and yellow cheese (mozzarella or cheddar) seasoned with basil.

Description


1 For the preparation of polenta: Boil the water with the salt (At 9 levels on the electric hob I use, I prepare it to level 5). Do not cook the polenta on very hot heat, because it will start to boil and spray everywhere! Slowly pour the polenta, stirring constantly (preferably with a wire stirrer). I use polenta, which is ready in 2 minutes. Stir constantly until it thickens and becomes creamy. Remove from the heat and immediately add the parmesan and butter, then mix well.


2 Grease the baking tray with one tablespoon of olive oil (I use a baking tray with a diameter of 26 cm). Pour the polenta and flatten with a spatula or spoon. Cut the tomatoes into slices and arrange them on the polenta. Sprinkle with grated feta cheese and grated yellow cheese (or mozzarella, why not cheddar). Season with basil and pour the remaining two tablespoons of olive oil.


3 Bake in a preheated 220-degree oven for about 20-25 minutes until the polenta acquires a pleasant golden crust.
