Description

For some time I wanted to make cream soup only from zucchini, but I was wondering how to make it tasty and fragrant without using additional artificial broths. The stewed onion and garlic give exactly the taste of the soup I was looking for and I am pleasantly fascinated by the result. It is suitable for vegans and people who follow a paleo diet.


1 Cut zucchini into cubes, onions and garlic into thin slices.


2 In a saucepan, saute the onions in olive oil for about 4-5 minutes over medium heat until translucent. Add the garlic for about a minute. Add 3 cups water and chopped zucchini. Season with salt and pepper. Boil over medium heat for about 20 minutes. Blend until smooth.
