I am pleased to present you the recipe for my favorite moussaka, but in a vegetarian version, namely moussaka prepared with soybean granules.

Description

I love moussaka, as well as everything made with potatoes. However, after I suddenly stopped eating meat, I had to come up with an alternative to one of my favorite dishes. I am pleased to present you the recipe for my favorite moussaka, but in a vegetarian version, namely moussaka prepared with soybean granules. In terms of preparation and taste it is no different from the traditional Bulgarian moussaka.


1 Pour soybean granules with water according to the instructions on the package. In my case, I put 2 cups of hot water on 1 cup of granules. Set aside for about 20 minutes.


2 Finely chop the onion, carrot and garlic. Stew onions and carrots for about 5-6 minutes, then add and fry the garlic briefly.


3 Drain the soybean granules if necessary. Add it and tomato juice to stewed onions, carrots and garlic. Season with spices - savory, paprika, salt, black pepper and cumin and bring to a boil, then remove from heat.


4 Peel and cut the potatoes into small cubes. Pour them into a baking tray. Add the vegetables with soy and about 1 cup of hot water. Bake in a preheated 220-degree oven for about 40 minutes.


5 Meanwhile, prepare the topping. Beat the eggs. Add the yogurt with the soda, parsley and white flour. Beat well with a wire whisk until smooth and homogeneous. Pour the moussaka with the filling and level with a spoon. Bake for another 20 minutes, until the filling acquires a nice golden crust.
