Delicious and healthy muffins made with quinoa, eggs, spinach, feta cheese and yellow cheese,  gluten-free . You can serve them hot or cold, they are suitable for morning or afternoon breakfast, as well as for lunch in a box.

Description

Delicious and healthy muffins made with quinoa, eggs, spinach, feta cheese and yellow cheese, gluten-free . You can serve them hot or cold, they are suitable for morning or afternoon breakfast, as well as for lunch in a box.


1 Boil the quinoa according to the instructions on the package, then drain if necessary and leave to cool.


2 In a bowl, beat the eggs. Add the quinoa, crushed feta cheese, grated yellow cheese, finely chopped spinach, salt and pepper. Stir well.


3 From the whole mixture, I've got 10 pieces of quinoa and spinach egg muffins. I use silicone molds for baking. Fill the 1/2 from each form muffin.


4 Bake in a preheated 180 degree oven for about 30-35 minutes or until the quinoa and spinach egg muffins acquire a pleasant golden crust.
