Description
I have been wanting to share the recipe for this roasted red peppers soup for a long time and obviously, its time has come. For me, it is a real hit, since my children who do not eat peppers (or at least think so) like it very much!
1 Finely chop the onion, carrot and garlic. Stew onions and carrots for about 4 minutes. Add the finely chopped garlic and fry for 1 minute. Add the tomatoes, chopped red peppers, water, white wine, basil, salt and black pepper. Simmer over medium heat for about 20-25 minutes, then blend until smooth.
If you use fresh basil, add it after the cream soup is ready, but before mashing it.
If you feel higher acidity in the soup you can add 1-2 pinches of brown sugar.
