Healthy and refreshing salad with chickpeas, tomatoes and cucumbers.

Description

1 Soak the chickpeas in a bowl for about 8 hours. Boil it according to the instructions. Wash it afterwards with cold water and set aside.


2 Peel and dice the tomato and cucumber. Finely chop the onion and parsley.


3 In a small bowl, press the garlic cloves. Add the olive oil, black pepper and lemon juice. Stir.


4 In a large bowl, mix the chickpeas with the chopped vegetables, parsley and olives. Add the dressing and salt. Stir well. Finally add the cheese.
