At home we love everything made with potatoes. This creamy potato soup with parmesan, sour cream, celery, onion and garlic is also one of our favorites recipes. The secret of its creamy structure is that part of it is mashed.

At home we love everything made with potatoes. This creamy potato soup with parmesan, sour cream, celery, onion and garlic is also one of our favorites recipes. The secret of its creamy structure is that part of it is mashed. Instead of dried parsley you can add rosemary, savory or oregano according to your taste.


1 Peel and finely chop the onion, celery and garlic. Melt the butter in a saucepan and add the chopped vegetables. Stew for 7-8 minutes.


2 Peel, wash and cut the potatoes into small cubes.


3 Add 3 liters of water, chopped potatoes, salt, pepper and parsley to the stewed in butter vegetables. Cook for 30 minutes.


4 Separate in a bowl about three or four ladle of soup, add the sour cream and blend until smooth. If you do not have a blender, you can use a potato masher. Add to the soup along with the parmesan and simmer for another 5 minutes.


Once the potato soup is ready, you can sprinkle each portion with more grated parmesan or finely chopped fresh parsley. You can also garnish with Croutons, kubeti... Or idea what to do with the old bread.
